Make the ultimate sharing dish with these Amazing Pulled Pork Loaded Fries - a perfect recipe for leftover Pulled Pork.
Whenever I make mySlow Cooked Pulled Pork or Stove Top Pulled Pork, I always like to keep some leftovers so I can make my amazing Pulled Pork Pasta Bakeor Pulled Pork Pizza, but today I fancied something different and really craving some chips. I settled on a sharing bowl of Pulled Pork loaded fries for me and my eldest to share with a salad.
It was so good, yummy smokey barbecue pieces of pulled pork, over crispy Fries, with fresh chopped peppers and onion and lastly melted cheddar, because loaded fries have to have some cheese, right?
For the fries I love to use Yukon Gold Potatoes, they don't need parboiling and have a lovely natural buttery flavour that is just perfect for chips in this Pulled Pork Loaded Fries.
In the UK look out for the Elfe variety of potato which is similar, but if not any potato of choice will work fine, use your favourite for these Pulled Pork Loaded Fries..
If you want to save time chipper your potatoes, I highly recommend one a Potato Chipper. They are such a handy gadget to have and will slice a potato into chips in seconds. You can get them with various side blades depending on the size of the fries you want.
Of course, a good ole knife will do the trick too, but if you love gadgets like me, you will love a potato chipper.
HOW CAN I ADD A ⅓ VEGETABLES TOTHESE PULLED PORK LOADED FRIES?
There are some vegetables with the peppers and onion, but to increase them up to a ⅓ of your plate, I recommend pairing with a nice crisp salad. My kids love Croutons, so I added a few crispy croutons to ours, but you can serve with any salad vegetables of choice.

Pulled Pork Loaded Fries | Slimming Eats

This recipe is gluten free, Slimming Eats and Weight Watchers friendly

Ingredients
- 650g of potatoes, sliced in chips
- approx 1 cup of leftover Slow Cooker Pulled Pork] or[ Stove Top Pulled Pork, warmed up
- ½ teaspoon of salt
- red pepper, diced
- green pepper, diced
- red onion, diced
- 3 green onions, sliced
- 30g of cheddar
- cooking oil spray
Instructions
- Rinse the potatoes until cold water
- Pat dry with some kitchen paper
- Add to a bowl with salt, spray with cooking oil spray and shake to coat, give another spray of cooking oil spray and shake again.
- Spread out on a baking tray lined with parchment paper.
- Place in the oven and bake for 40mins (take out half way through just to rotate for even browning)
- Transfer fries to a baking dish
- Top with the leftover pulled pork, red onion, red pepper, green pepper and cheddar
- Place bake in the oven for 8-10 mins until cheese is melted
- Sprinkle with chopped green onions
- Enjoy!!
